As I care about the environment and our planet, all recipes are plant based. However, you'll not find a lot of meat replacements or specialty vegan foods, as the recipes simply do not require meat, or where vegetables are used instead.

In regards to plant based milk, butter and whipped cream, you can replace these with the regular kinds if that is what you have in your kitchen.

Most recipes are also without refined sugar (replaced with maple syrup) and many are naturally gluten free.

Remove the Seeds Easily

If you've ever worked with rosehips, you know that it can take a lot of time to remove the seeds. Maybe you've even held yourself back from using rosehips in your cooking because it took too long to do this job. If so I understand.

When I first discovered rosehips, I skipped many common rosehip recipes as they simply required me to core too many fruits. I then started to develop new recipes that required far less rosehips. At the same time, I learned specific tricks and techniques that made the coring so much easier.

In this book, I'll share all of them with you, so you can spend more time enjoying rosehips and less time removing the seeds. At the same time, most recipes only include 50-200 grams of rosehips, which can be cored relatively fast (3-20 minutes) if you follow the tips and tricks I share with you.

About the Book

This is the first cookbook that I know of, which focuses solely on rosehips. It was published and printed in Denmark in 2019 through the Danish publisher Muusmann, and today it's finally available as an e-book in English.

Besides the practical information and recipes, this book also gives you an introduction to rosehip, the history of the fruit and its uniquely high content of healthy substances. The nutritional information will not just teach you about rosehips but also give you knowledge about specific nutrients that you can use to enhance your overall diet and health. Below you can view some of the main chapters of the book.

The fruit of the wild rose: introduces the history of rosehips and the wild roses, including the fruit’s role as food and medicine throughout times, and the specifique wild rose, Wrinkled rose (Beach rose), which is the focal point of the book.

Vitamins and healthy substances in rosehips: dives into rosehip’s uniquely high content of health promoting substances, including vitamin C, E and A, antioxidants and flavonoids. In these chapters, you'll discover how rosehips can improve your health and well-being in different areas.

Cooking with rosehips: gives you practical tips for picking, storaging and coring as well as an introduction to how rosehips unique flavour can be used in both the sweet and salty kitchen. It also touches on rosehip’s nature of being 'a taste hybride', which you'll learn more about inside the ebook.

Rosehips recipes: enjoy over 40 delicious plant based recipes for every meal of the day. Try rosehip pancakes or granola for breakfast; bread with rosehip pesto or stuffed rosehips with cashew cheese as a snack; or how about a rosehip risotto or pizza for dinner? For the sweet tooth, try rosehip snails, ice cream or muffins. Besides the entirely new rosehip recipes, this cookbook also gives you some of the old classics like rosehip syrup, squash, jam and powder. If you love the taste of rosehip, you have a lot to look forward to.

Note: The book mainly focuses on the fruits from Wrinkled rose (see picture under "the forgotten superfruit" above), also known as the Beach rose, Japanese rose or under its Latin name: Rosa Rugosa. These are some of the largest rosehips nature has to offer and therefore easy to work with in the kitchen- and they taste amazing.

The recipes can also be made with other types of rosehips, just note that they might not turn out the same way as when you use the fruits of the Wrinkled rose. The time removing the seeds will also increase if you use rosehips that are noticeably smaller.
